The early Christians where constantly persecuted during those days. That was the time before the conversion of Constantino (the Roman emperor who saw the sign of the cross in the sky, won a war and became a Christian).
Worships and Christian cults were done in clandestine. Christians meet and recognized each other by a certain password, which is the fish sketch. It works just like in espionage. When a Christian needs to be identified by another Christian in a secret meeting, one will just draw this symbol unmindfully and the other will eventually got the message.
But what is the origin of this symbol? Perhaps they chose this symbol because loves to eat fish. His apostles were mostly fishermen. When he wanted to be recognized as the risen Lord, he ate fish with them. Yes fish has special meaning in their friendship.
But the most popularly accepted meaning is the Greek translation of fish ichthus which is an acronym for "Jesus Christ, Son of God, Savior" that is Iesous (Jesus) CHristos (Christ) THeou (God) Uiou (Son) Soter (Savior)
